Chicken & Rice Casserole



Preparation time: 10 minutes
Cooking time: 25 minutes
Gross time: 35 minutes
Serves: 2 to 8 people

Recipe Ingredients:
·         2 tbsp. of unsalted butter
·         2 cloves of garlic, finely chopped
·         4 scallions, sliced
·         2 cups of broccoli florets
·         2 cups of shredded rotisserie chicken (skin removed)
·         1 cup of medium-grain white rice
·         1 plum of tomato, chopped
·         Kosher salt and freshly ground pepper
·         2 cups of low-sodium chicken broth
·         ¼ cup of sour cream
·         1 cup of diced dill havarti cheese (about 4 oz.)
·         ¼ cup of grated parmesan cheese (about 1 oz.)


Cooking Instructions:
1.       Select the Sear/Sauté function on your Ninja, set

your Ninja on Stove Top High and Sauté the garlic and onions.

2.      Add the rest of your ingredients and switch your Ninja to Oven Mode at 425°F for 20 minutes.

3.      Sprinkle with the remaining havarti and parmesan, then broil about 2 minutes until it turns golden completely.

  

4.      Then Sprinkle with the reserved scallions. Now serve and enjoy your delicious meal hot!
