Peter Cotton Tail Carrot Muffins



Preparation time: 5 minutes
Cooking time: 15 minutes
Gross time: 20 minutes
Serves: 3 to 4 people

Recipe Ingredients:
·         ¾ cup of all-purpose flour
·         ½ cup of whole wheat flour
·         2 tablespoon of wheat germ
·         1 teaspoon of ground cinnamon
·         1 teaspoon of baking powder
·         ½ teaspoon of baking soda
·         Pinch salt
·         1/3 cup of vegetable oil
·         ½ cup of buttermilk
·         2 large eggs
·         ¾ cup of light brown sugar
·         2 cups of grated carrots


Cooking Instructions:
1.       Preheat your oven to 350°F. Place all the ingredients, except carrots, into the 48 oz. Blender, blend until well combined.

2.      Add in carrots to the blender and pulse 2 to 3 times until well-combined. Line a muffin pan with paper cups and spoon the carrot batter into the cups.


3.      Bake for about 18 to 20 minutes, when the time is up. Serve immediately and enjoy!
